Hugo’s Presents Pure Spring Tastes

From May to June, Hugo’s is pleased to introduce a few European specialties made with an abundance of seasonal produce and gentle cooking methods to delight guests’ palates with the pure spring tastes.

Sample the refreshing appetiser lobster and white asparagus salad with radish, romaine salad, strawberry, wild garlic pesto and grape seed oil, where the succulent lobster offers a surprising contrast in texture with the delicate white asparagus.  The creamy fennel foam soup with scallop, orange, herbal oil and pine nuts is another perfect choice, in which drops of orange juice perfectly complement the unique fennel taste.

Other classic recipes with a modern twist include the poached German white asparagus with roasted organic French guinea fowl, morels, pearl onions, green asparagus, ratte potatoes and hollandaise sauce.  The slow-roasted French guinea fowl is paired with slow-poached white asparagus, making a unique collection of sweetness, tenderness and crispness on one plate.

Using superior quality salmon that is officially endorsed by the French government, the crispy and succulent roasted label rouge Scottish salmon fillet, olive oil with smoked cauliflower, green asparagus, beetroot and white wine foam is a must-try for seafood lovers.  Diners who fancy a classic recipe with a delectable taste are recommended to try slow-cooked organic Welsh lamb loin with Parma ham, artichoke, cherry tomato, physalis, chervil and celeriac puree.

Hugo’s is an authentic European fine-dining restaurant serving traditional Western cuisine prepared only with the finest ingredients available.  Table-side cooking is the icon of the restaurant.
