Legendary chef Pierre Gagnaire returns to his two-Michelin-starred restaurant Pierre at Mandarin Oriental, Hong Kong from 12 to 17 March, 2018 to launch his new Spring tasting menu.
Using the finest seasonal ingredients from the region of Sauternes in Southwest France, Chef Gagnaire together with Jacky Tauvry, Chef de Cuisine of Pierre, will showcase their extraordinary talent with a six-course menu. Dishes to highlight include Corolla of Scallop and Sauternes, Segments of Clementine Marinated with Lime and Creamy Vanilla Sauce; Sweet Onion Ravioli Seasoned with Green Curry, Lobster and Fresh Coriander Salpicon; and Sauternes and Wild Mushroom Risotto, Shredded Veal and Walnuts.
To fully enjoy an unforgettable journey, the hotel’s Head Sommelier Hubert Chabot has carefully picked five different French wines that perfectly pair with Chef Gagnaire’s exclusive menu – NV Agrapart from Grand Cru Avize; 2012 Carmes de Rieussec from Bordeaux; 2012 Vilmart & Cie from 1er Cru Rilly-la-Montagne; 2012 Roses de Jeanne from Celles-sur-Ource; and 1999 Château Suduiraut from Bordeaux.
