Summer Fruits and Perrier-Jouët Champagne Combine for Soothing Afternoon Tea at Lobby Lounge

Early summer calls for something bright and relaxing, and that translates to a refreshing palate in our dining experience. Food composed of small, delicate bites take advantage of the season’s lighthearted mood, while a glass of bubbly further lifts up the spirit. This summertime, Lobby Lounge launches an afternoon tea set inspired by the premium champagne of Perrier-Jouët. Guests are encouraged to convene amid the balmy weather, delicious creations made with champagne and fresh summer fruits, and share joyous moments at the elegant atmosphere of Conrad Hong Kong.

Highlighting signature items from French cuisine, the tea set takes diners on an imagined picnic on Champs de Mars. Mushroom ragout in Vol au Vent boasts an extra light, breeze-like texture which captures the essence of early summer. Its deep flavour serves champagne lovers especially well with the infusion of Perrier-Jouët in the ragout. The ever-popular éclair comes with a savoury twist as it is stuffed with Bayonne ham mousse. Rarely tasted in a creamy form, the ham’s subtle saltiness is well complemented by the buttery choux pastry. Other enticing options range from foie gras terrine with raspberry aspic to brandade cake – blending fresh and salted cod for a lovely balance – with saffron sauce.

The lavish desserts benefit from summer’s bountiful fruit offerings. Mango, citrus and other seasonal fruits impart natural sweetness on the creations. The most notable item prepared by pastry chef Billy Yuen is Madagascar vanilla mousse with white peach and champagne espuma. Each of the trio contributes a unique fragrance to the ensemble. The crisp champagne brings the richness of vanilla at an equilibrium. Other fruity selections such as mango custard tart, Granny Smith apple fromage blanc cheese dome provide visual sensations for their yellow and green tones in addition to their impressive tastes.

The spring afternoon tea set is available on the weekdays between 24 April and 31 May at Lobby Lounge. It is priced at HK$480* (serving for 2) and HK$278* each set, paired with tea or coffee. Guests can also have a taste of Perrier-Jouët’s newest Blanc de Blanc champagne at HK$220* per glass or Grand Brut at HK$95* per glass with a complimentary champagne-inspired perfume. Those who order the bubbly by bottle with the tea set serving for two will receive a set of exquisite Perrier-Jouët champagne flutes made in France with the brand’s classic floral motif.
