MICHELIN TWO-STAR GUEST CHEF CARLO CRACCO TAKES THE HELM AT TOSCA

The glitz and glamour of the highly-coveted Michelin stars will descend upon Tosca at The Ritz-Carlton, Hong Kong. A personal invitation was extended by resident Michelin-starred Chef Pino Lavarra to the icon of the Milan cooking scene, guest chef Carlo Cracco, who will showcase his vivid creativity and deeply forged culinary roots from November 3 to 5, 2016.

Born in Vicenza in 1965, Chef Cracco began his culinary training at the Professional Hotel Institute near his hometown. His professional career started in the much-acclaimed kitchen of Gualtiero Marchesi in Milan, the first Italian restaurant to attain three Michelin stars. The turning point of his career came when he moved to France, where he had the opportunity to work alongside world-class chefs Alain Ducasse and Alain Senderens. With his remarkable achievements of reaping the third Michelin star for Enoteca Pinchiorri and the first Michelin star for Le Clivie, Chef Cracco had risen to fame for his cutting-edge and artisanal approach to Italian cuisine. Never resting on his glories, opening his own restaurant was the next logical step. Chef Cracco entered into a joint venture with a local investor to open Cracco-Peck Restaurant in 2001. In three years’ time, Cracco-Peck Restaurant earned two Michelin stars and received nationwide attention. He claimed sole ownership of the restaurant in 2007, the same year it was named one of the “50 Best Restaurants in the World” by San Pellegrino. Riding on his tremendous success on the culinary scene, chef and restaurateur Carlo Cracco made his way to television with his appearance as a strict yet charismatic judge on the culinary talent show MasterChef Italia, as well as Hell’s Kitchen Italia.

Known for his unbridled courage to challenge himself, Chef Cracco never loses sight of the significance of menu versatility. For three days only, he will bring a tempting range of newly crafted dishes to the tables of Tosca. Priced at HK$1,680 for four courses and HK$2,180 for seven courses, the dinner menus offer an ultimate immersion in Chef Cracco’s imaginative culinary world. For guests looking for a midday indulgence, the lunch menus from HK$588 are a perfect remedy to get them through a busy day. Dishes of special note include “Prawns, Salted Pistachio and Beetroot,” “Marinated Egg Yolk, Pappa al Pomodoro and Vegetables,” “Amberjack with Vanilla White, Green and Purple Asparagus,” and “Chocolate, Lentils and Peas.” For the full menus, please refer to the appendix.
