ENTICE THE SUMMER PALATE WITH STRAWBERRY CITRUS AFTERNOON TEA AT CAFÉ103

From now until July 31, Café 103 presents a Strawberry Citrus Afternoon Tea for dessert aficionados to beat the summer heat. For one month only, a delectable selection of strawberry and citrus treats will be served on Café 103’s signature bookshelf tea stand, presenting an assortment of exciting creations to realize a sweet and refreshing fantasy.

Richard Long, Executive Pastry Chef at The Ritz-Carlton, Hong Kong, led his talented team to design this tempting afternoon tea menu. “The tanginess of citrus fruits is a perfect complement to the sweetness of strawberries, making this relishing duo a summer favorite for any palate,” said Chef Richard. “Colorful and delicate, these enticing pastries do not only tempt the taste buds, but are also a feast for the eyes. The Strawberry Citrus Afternoon Tea is the perfect remedy for guests to get through the scorching summer”.

The refreshing taste of strawberry confit in Vanilla Strawberry Tart bursts through the smooth mascarpone vanilla cream, whereas the heavenly light strawberry white chocolate cream and strawberry glaze on top adds a new dimension of texture to this bite-sized confection. Lemon Gianduja Tart is an irresistible treat featuring a symphony of sweetness highlighted by lemon curd, milk gianduja cream and lemon confit zest. Featuring strawberry coulis, almond sponge cake soaked in strawberry puree, strawberry basil cream, basil-infused strawberry puree, Strawberry Basil Verrine embraces a world of summer flavors beautifully layered in one glass.

Chef Richard’s very own version of Citrus Canelé is half-dipped in orange zest-infused chocolate coating, creating an interesting twist to this traditional pastry from Bordeaux. Not to be missed is Richard’s personal favorite – Strawberry Sandwich, an indulgent treat with alternate layers of strawberry white chocolate cream and chocolate butter milk sponge cake, enhanced with strawberry compote dices and strawberry coulis.
