WHITE ASPARAGUS COMES TO TOWN AT CUCINA

Only seasonally available, the highly coveted white asparagus will take the culinary limelight at Cucina from 3 May to 9 June 2016. Italian Chef de Cuisine Andrea Delzanno has crafted a series of dishes to showcase the flavourful and aromatic qualities of the “royal vegetable”, also known as “The Vampire of the Vegetable World”.

In ancient times, this rare and precious vegetable – also dubbed “white gold” or “edible ivory” – was affordable only by upper-class families. Unlike its green-hued cousin, white asparagus is grown in complete darkness, hence its nickname, “The Vampire of the Vegetable World”.

Chef Andrea selects the finest white asparagus from Black Forest in Germany – regarded by gourmands as the best source in the world – for his special white asparagus menu. During its very short seasonal prime, succulent white asparagus has delicate herbal notes and a fine, tender texture. The distinctive flavour is delicious and can be served hot or cold.

Catering to a range of taste preferences, Cucina’s special menu offers a choice of appetisers including Poached white asparagus with hollandaise sauce and Parma ham and Raw asparagus salad, avocado, crab meat, lemon dressing and caviar. Highlighted main courses include Risotto with white asparagus and mascarpone cheese with red prawn tartar and Lobster ravioli with white asparagus and fresh cherry tomato sauce.
