This Ramadan, The Resort Café at Sunway Resort Hotel & Spa and the brand new Café West at Sunway Pyramid Hotel West in Sunway Resort City will be enticing diners with a melting pot and cultural fusion of flavours offering over 400 authentic and traditional local specialities from 6 June to 5 July 2016, in the two (2) restaurants.

The two (2) restaurants, The Resort Café, located at the Lobby Level of Sunway Resort Hotel & Spa and Café West, located on Level 8 at Sunway Pyramid Hotel West will commence the special dinner buffet nightly from 6 June to 5 July 2016, starting from 6.00pm to 10.30pm and priced at RM168 nett per adult and RM68 nett per child (aged between 6 to 12 years old).
Carefully curated and developed by a team of speciality chefs, the two (2) restaurants will entice diners with a melting pot of over 400 dishes, as part of the nightly buffet spreads. Diners are in for a treat with the lively vibes and local cultural-infused dishes at The Resort Café’s “Bustling Asian Food Hall” with its interactivity and flavours of classic, traditional and nostalgic dishes from Malaysia and around the region; while over at Café West, with “Live Food Bazaar” showcasing action stations of local-focal seasonal favourites and Kawah stations.
This year, alongside the many perennial dishes, our chefs will be sharing their favourite recipes for the much-sought after condiment, the home-made sambals. The much-loved and for that “extra-kick” to complete the meal, both restaurants will be featuring 25 types of home-made Sambal dips (on a daily rotational basis) for a true sambal adventure.

A NEW SAMBAL ADVENTURE FOR ALL TASTES: THE RESORT CAFÉ AND CAFÉ WEST
The one thing that many Malaysians can agree on and relate to is that adding a dash of Sambal to any local speciality will “bring-out” the true flavour of the said dish and add that “extra kick” to complete the meal. Understanding this, the brigade of over 60 Malaysian chefs at both The Resort Café and Café West created 25 types of home-made Sambals using a wide range of ingredients from fruits to vegetables and different types of spices, of which eight (8) types will be served nightly at both restaurants on a rotational basis.
Five (5) out of the 25 sambals are must-have house-specials which are the Sambal Belacan Bonda, Sambal Cabai Hijau, Sambal Petai, Sambal Kelapa and Sambal Kelapa Pudina. The complete list of the 25 Shades of Sambals are Sambal Kicap, Sambal Belacan Bonda, Sambal Mangga, Sambal Bawang, Sambal Limau Pedas, Sambal Tumis Cili, Sambal Bawang Ikan, Sambal Petai, Sambal Tomato, Sambal Daun Limau Perut, Sambal Cabai Hijai, Sambal Mata Cili Padi, Sambal Kelapa, Sambal Nenas, Sambal Tempoyak, Sambal Kacang Berlada, Sambal Air Assam Lada, Sambal Budu, Sambal Cincalok, Sambal Ketumbar, Sambal Thai Som Tam, Sambal Berlada, Sambal Kelapa Pudina, Sambal Bunga Kantan and Sambal Pedas Lemon.
To complement the 25 Shades of Sambals, The Resort Café and Café West will feature over 15 different varieties of local ulam-ulaman (salad) on the buffet. These include local picks like Daun Pegaga, Ulam Raja, Daun Selom, Kacang Botol, Petai, Jering, Terung Pipit, Daun Mengkudal, Daun Selasih, Pucuk Ubi, Kobis Bulat, Daun Kadok and Jantung Pisang.
A NEW RECIPE FOR BUBUR LAMBUK
BUBUR LAMBUK PARIT BUNTAR BY CHEF NORZA
This year, a new bubur lambuk recipe will be served, created by Chef Parthiban and Chef Norza. Inspired by Chef Norza’s grandmother’s recipe, the Bubur Lambuk Parit Buntar is a confluence of recipes and cooking methods from Kedah, Perak and Penang steep in tradition. Served in both The Resort Café and Café West nightly throughout this period, the new recipe is a result of clever infusion of hand-grinded ingredients that included mixtures of cumin seed, fennel, black pepper, star anise and many other “secretly-guarded spices and ingredients” in developing the beef and chicken Bubur Lambuk varieties.

BUSTLING ASIAN FOOD HALL WITH CULTURAL INFUSED MALAYSIAN FAVOURITES
The Resort Café at Sunway Resort Hotel & Spa embraces a “Bustling Asian Food Hall ambiance with a focus on cultural-infused Malaysian and regional favourite dishes” as the restaurant’s 60-meter long open-exhibition kitchen features classic dishes with a new twist and perspective. Priced at RM168 nett per adult and RM68 nett per child aged between 6 to 12 years old, diners can expect an expansive display with focus on the Malay Archipelago featuring dishes and recipes from Malaysia, Singapore, Indonesia and several regional favourites.
One of the highlights at The Resort Café will be at the carving station featuring the Roasted Jumbo Beef Leg and Venison, on the buffet spread where the chef will slice the succulent meat directly unto the diners’ plate. The 28kg whole leg is boiled for two (2) hours and then marinated with local spices and mixed herbs (ginger, garlic, salt, masala, coriander, yoghurt, mint leaves and cumin powder) before slowly roasting for four (4) hours to retain its moisture, producing a tender and juicy meat for diners to enjoy.
Another favourite of The Resort Café is the Churrasco; which returns with tender and juicy grilled-to-perfection meats on large skewers with selections like jumbo chicken sausages, king prawns, Hokkaido squids, chicken wings, fish and assorted vegetables; all carefully marinated with lemon, salt and herbs to maintain its original taste, are freshly grilled for diners and are complemented by the chefs’ range of “sambal” dips.
Seafood enthusiasts will be dazzled by the variety of fresh seafood on ice including Clams, Prawns, Half Shell Mussels, Slipper Lobster, Flower Crabs, Salmon Sashimi and Tuna Sashimi; served with its complementing sauces and dips.
Back by popular demand and the most sought after dish at the dinner special last year was The Resort Café’s Soup Gearbox Turbo – and it continues to be the restaurant’s must-have dish in 2016. This popular favourite is cooked over a slow fire for eight (8) hours and individual bone marrow which is the prized ingredient of this dish is served to diners from a large cauldron, providing diners with a visual feast and aromatic treat.
Inspired by the traditional Cheong Fun, a new dish with a cultural twist was created with a choice of Beef Rendang or Chicken Satay wrapped with Rice Noodle (Cheong Fun). Steamed to perfection, the silky-smooth and feather-like textures of the rolls bring a new perspective with the two (2) savoury fillings; most suitable for the seasonal tastes.
Noodle lovers are also in for a treat with a wide variety of soup and gravy based noodles at the noodle station which includes the Mee Rojak, Mee Bandung Sumatra, Laksa Lemak, Laksa Johor, Prawn Mee and Pan Mee. Over at the Roti Station, the chefs will be toasting a la minute Malaysian favourite roti’s like the Murtabak, Roti Pisang, Roti Jala and Roti Tisu which can be enjoyed with the selection of Gulai Kawah that will be served outdoor in super-large cauldrons. With a selection of two (2) Gulai Kawah served nightly from eight (8) rotational varieties, the list of Gulai Kawah comprises the Gulai Kepala Ikan, Gulai Kambing Kelantan style, Gulai Assam Pedas Kupang, Gulai Rendang Tok and much more.
The Resort Café’s signature Salad and Fruit Towers will be filled with a wide range of the freshest greens and local seasonal fruits. Kept fresh with its wrap-around design equipped with chilled water pipes, the Fruit Tower will feature a range of local fruits served in slices, cubes and as a whole which include selections like the Rambutan, Jack Fruit, Ciku, Langsat and more. Over at the Salad Tower, the main highlight will be traditional Ulam-ulaman offering an assortment of over 15 local picks like the Kacang Botol, Petai, Daun Selom and Jantung Pisang as well as pickled fruit (jeruk) which can be enjoyed with the wide selection of Sambals.
Whether taken at the beginning or to complete a meal, the dessert bar is a must. Made hot and fresh on the spot of local snacks that many grew up with; the Apam Balik at The Resort Café comes in four (4) filling choices – the traditional corn with nuts or for a twist, give the Red Bean, Pulut Hitam (Black Sticky Rice) and Sweet Coconut Palm Sugar (Inti Kelapa) filling a try. Make sure to feast on the Putu Piring, straight off the “piring steamer”. New on the menu is the Ice Kepal with Cotton Candy. Here, thin shaved ice with fine candy floss with a mixture of local ingredients like Red Bean, Corn, Sirap and Gula Melaka will create nostalgic memories. The dessert buffet will also offer delectable desserts including Malay and Nyonya Kuih-Muih, Pengat-Pengat, festive Cookies and Cakes, Ice-cream, Tarts and more.

LIVE FOOD BAZAAR WITH LOCAL-FOCAL SEASONAL FAVOURITES
Over at Café West, located on level 8 at the newly opened 4-star Sunway Pyramid Hotel West celebrates its first dinner buffet series with “Live food bazaar with local-focal seasonal favourites”, priced at RM168 nett per adult and RM68 nett per child (aged between 6 to 12 years old). Café West food highlights will focus on the true essence of local home-cooked offerings served and presented in a contemporary Malaysian food bazaar atmosphere for an uplifting culinary affair.
Nasi Ambang, a popular dish in Johor, will be available as part of the buffet spread in Café West. Usually served at a “kenduri” in large platters to share, or at a restaurant or street side stalls in individual portions, the dish consists of many side dishes mixed together before consuming. While there are no “fixed-rules” to what side dishes make a Nasi Ambang, Café West will be serving the speciality with White Rice with Sambal, Roast Chicken, Mee Goreng, Salted Chicken Egg, Salted Fish, Mixed Vegetables with Tempeh, Tomato and Cucumber.
A sure hit amongst diners will be the Beef Soup – Mamak Style, a flavourful broth produced from two (2) hours of boiling the different parts of the beef such as the Bones, Meat, Tongue, Liver, Brisket and Stomach, complemented by traditional mix of rich spices and fresh herbs.
Creating a visual feast for diners, the bright red, green and yellow Tandoori Chicken is not to be missed; featuring the classic, spinach and turmeric marinates. The chicken is roasted using the original tandoor clay oven, for that smoky flavour that many enjoy. Other favourites at the carving station will also include a whole lamb, oven baked for approximately three (3) hours to seep the marinates of tong koi, star anise, cinnamon, young ginger, spring onion, and the Chinese 5-spiced powder.
Seafood enthusiasts will be dazzled by the variety of fresh seafood available at the Seafood Bakar counter including Clams, Squid, Prawns, Stingray, Fish and Half Shell Mussels, marinated with local spices and grilled to perfection.
