Simon Choi, Executive Chef of Rouge presents a range of authentic farmhouse dishes are uniquely paired with tea to bring out and balance the natural flavours and freshness.

Chef’s Recommendations include Braised Minced Fish with Bean Curd in Fish Soup, Braised Whole Dace Fish stuffed with Glutinous Rice, Crispy Toast with Milk and Pan-fried Shrimp Pancake. Auspicious dishes like Shredded Chicken with Spring Onion and Ginger, Deep-fried Shrimp Toast are also available offering classic taste rarely found in Hong Kong nowadays.
