Connoisseurs of gourmet sweets will soon have the pleasure of enjoying the latest chocolate and macaron creations from Pierre Hermé Paris. Set against the iconic backdrop of Victoria Harbour, the prestigious pastry brand opens at The Ritz-Carlton, Hong Kong with an exclusive retail counter showcasing the very best of haute pâtisserie. 
Since its opening in 2011, The Ritz-Carlton, Hong Kong has been specializing in creating fond memories for guests with its unfailing dedication to craftsmanship and artistry. Founded by Pierre Hermé, the legendary pâtissier known as “The Picasso of Pastry”, Pierre Hermé Paris offers gourmands a unique experience in the world of tastes, sensations and pleasures. “With a shared commitment to craftsmanship, this collaboration reinforces ‘The Art of The Craft’ philosophy of The Ritz-Carton, Hong Kong and opens new creative possibilities for Pierre Hermé Paris”, said Mr. Pierre Perusset, General Manager of The Ritz-Carlton, Hong Kong. Pierre Hermé Paris at The Ritz-Carlton, Hong Kong will be open daily from 10am to 8pm from January 17, 2015.
Following the success of the brand’s partnership with The Ritz-Carlton, Kyoto, the Pierre Hermé Paris retail counter will feature signature macaron and chocolate creations, as well as seasonal and exclusive specialties, which will be introduced throughout the year.  Special focus will be placed on a range of gifting options for those looking for gourmet souvenirs.  From jams made by Christine Ferber to a range of exclusive gift hampers designed by Patrick Jouin, guests will be immersed in an enticing display of sweets upon entering the arrival lobby on Level 9. 
To engage guests with sweet pleasures during every moment of their experience, this collaboration also entitles them to unrivaled offerings in the top suites and selected restaurants. While sweets can melt away tiredness, the Pierre Hermé Paris welcome amenities in the top suites will undoubtedly brighten up a traveler’s day after a long journey.  Guests can enjoy a selection of chocolates and confections in the comfort of the highest hotel in the world. 
Delivering genuine care and personalized services, The Ritz-Carlton, Hong Kong promises to create a “sweet” stay to be remembered for years to come. About Valentine’s Day Afternoon Teas
To celebrate this collaboration, Executive Pastry Chef Richard Long, and Chef de Cuisine Brook Wong of The Ritz-Carlton, Hong Kong have crafted two exquisite Valentine’s Day afternoon tea sets featuring macarons by Pierre Hermé Paris. Presenting Macaron Rose & Coing and Macaron Mogador, the essence of haute pâtisserie will highlight the chocolate-themed Valentine’s afternoon tea at Café 103.  The heavenly “Chocolate Orange Choux” features a symphony of orange delights including orange confit, jelly, jam and chocolate orange cream. Silky smooth jasmine dulcey mousse and dulcey geleé in “Jasmine Dulcey Dome” promises to indulge that special someone. Inspired by the soothing fragrance of lavender, Chef Brook added dried lavender in the curing process of smoked salmon, making “Lavender Smoked Salmon Sandwich with Avruga” an aromatic savory treat.

The beetroot foam in the “Confit Duck Mousse Tart” perfectly balances the flavourful duck meat and produces a beautiful pink hue.

The chocolate-themed afternoon tea at Café 103 is served from 3:30 to 5:30pm. For guests who already have a busy afternoon planned, enjoyment starts early at The Lounge & Bar from 2pm on February 13 and from 12noon on February 14&15.
