THE RITZ-CARLTON, HONG KONG ANNOUNCES AFTERNOON TEA POP-UP BY PIERRE HERMÉ PARIS

The Ritz-Carlton, Hong Kong has announced the launch of an exclusive pop-up by Pierre Hermé Paris. For two weeks beginning August 15, The Ritz-Carlton’s Café 103 will   offer an afternoon tea selection featuring pastry creations from Pierre Hermé’s Fetish Infiniment Citron collection.

The Fetish Infiniment Citron collection is a celebration of lemon flavours, using exclusively Sicilian lemons which are juicier and more flavourful than ordinary lemons. Pierre Hermé dedicated himself to elevating the taste of lemon by analysing its different aspects: bitter, acidic and sweetly perfumed.

In a rare opportunity for Pierre Hermé fans in Hong Kong, guests will be able to experience, for the first time, fresh pastries made exclusively by a Pierre Hermé Paris Executive Pastry Chef from Japan, together with The Ritz-Carlton, Hong Kong’s Executive Pastry Chef Richard Long.  

Diners can look forward to pastries including the Chou Infiniment Citron.  Pierre Hermé’s cream puff creation is made of shortbread pastry, velvety lemon cream and candied citrus. Crunchy on the outside and soft on the inside, the chou pastry is covered with a fine layer of lemon crumble before baking, which crackles under the palate.  This chou is a combination of the different flavours and textures of the lemon; from the creamy and bitter to the acidic and sweet.

Collaborating on the afternoon tea menu is Brook Wong, Chef de Cuisine of The Ritz-Carlton, Hong Kong. Creating a selection of savoury bites to enhance the experience, the chef says, “I was inspired by the marriage of refreshing, sweet and sour tastes on the flavor profile of the Pierre Hermé citron collection when designing the savory items.  I used lemon curd to balance out the intense flavor of the herb-marinated smoked salmon in the mini sandwich.  One of the must-try items is the seafood with lemon butter spread on the light and refreshing lemon bread handmade for this collection.  I have also created the all-time favorite, confit duck meat and foie gras mousse tart, and used candied lemon peel to balance the richness of the delicacy.  To complete the savory flavor, a simple citron egg salad sandwich is added to complement the refreshing taste before the end of this amazing summer.”  

A spectrum of flavours and textures that will satiate the palate, the afternoon tea menu at Café 103 will also showcase sweet offers including the macaron, cheesecake and sorbet.   (Please refer to Appendix 1 for the full menu)
